Cucumbers filled with tuna cream



Setting-up time: 10 minutes


Ingredients (for 4 people)


- 1 big cucumber

- 1 box of 140 g of whole tuna

- 20 cl of double cream 15 % of fat

- 1/2 yellow lemon 

- 8 pitted green olives


The basic grocer's shop:

- 1 soupspoon of olive oil 

- 8 leaves of basil

- Salt, pepper

Peel the cucumber and cut it in eight sections of equal size.

Make them hold upright then by means of a spoon and remove pips as well as a little pulp on sides, by taking care of leaving intact the bottom of every section.

In a salad bowl crush the tuna with the fork, add the cream, mix in a homogeneous way, then season with the lemon juice, some salt and pepper.

Stuff the cucumbers of this preparation, then decorate every end of cucumber with an olive and a leaf of basil.


Serve very freshly.

 

 

 

 

Stuffed peppers

 

 

 

 

Setting-up time: 10 minutes

Cooking time: 1 hour


Ingredients (for 4 people)


- 375 g of minced beef

- 10 tablespoons of rice 

- 4 red peppers

- 2 tomatoes 

- 1 egg 

- 50 g of Parmesan cheese 


Basic grocer's shop:

- 1 dash of olive oil

- 3 onions

- 2 cloves of garlic

- 1 tablespoon of chopped parsley

- Some branches of thyme


Preheat the oven at 200°C (thermostat 6/7). Peel and slice thinly onions and garlic. Cut tomatoes boorishly. Mix the meat, the rice, the egg, the tomatoes, the onions, the garlic, the parsley and the thyme. Salt, pepper. Wash peppers, remove the "hat", then deseed them. Fill peppers with this practical stuffing and strew with grated cheese. Pour 1 dash of olive oil into an oven-proof dish and arrange stuffed peppers there. Put in the oven during the 1 hour and it's ready!


 

 

 

 Zucchinis bread

 

 

 

Setting-up time : 25 minutes

Cooking time : 45 minutes


Ingredients (for 4 people):

- 3 big zucchinis (or 4 medium)

- 2 cloves of garlic

- salt, pepper, basil

- 4 eggs

- 1 small jar of fresh cream

- 3 or 4 bread-crumb


Preparation of the recipe :


Peel some zucchinis (according to thickness), cut them in small dice, then get brown them in the olive oil 20 - 25 mn with the chopped garlic, the salt, the pepper and the basilics.

On the other hand, beat energetically 4 eggs, then incorporate in the fresh cream and bread-crumb. Mix the whole in zucchinis.

Cook approximately 45 mn in a moderate oven, in a loaf pan buttered and papered with slices of zucchinis.


Serve it warm or cold.


 

 

 

 

 

Zucchinis soup

 

 

 

 

 

 

 

Setting-up time : 30 minutes

Cooking time : 30 minutes


Ingrédients (for 6 people) :

- 1 kg of zucchinis

- 300 g of potatoes

- 1 or 2 onions 

- 1 clove of garlic

- curry, salt and pepper

- oil


Preparation of the recipe :

Cut in cubes zucchinis and peeled potatoes. Cut onions boorishly.


Prepare some broth of poultry

In a pot, made warm 2 tablespoons of oil. When that is very hot, pour onions and garlic and sprinkle with curry (you can be generous but if the presence of the curry surprises you, put in little the 1st time).


Move constantly, the time that onions become soaked with curry. Overturn 1 liter of water (including the broth).

Add potatoes and 5 - 10 mn later, dice of zucchinis. 

Let cook 20 min. The soup does not have to boil. Salt and pepper.

Mix (rather as much as possible, this soup is better ribband) and It is ready!





Recipe of the month:

Round zucchinis filled of tuna 






Setting-up time : 30 minutes

Cooking time : 10 minutes


Ingredients (for 4 persons):

- 4 round zucchinis

- 1 limps of tuna (130 g.)

- 20 cl of scum

- 1 soup spoon of mustard

- 1 beaten egg

- Small chive

- Salt, pepper 


Preparation of the recipe:


Preheat the oven at 180 °.


Cut the height of zucchinis and empty zucchini of a part of its meat. Cook zucchinis in boiling salty water during 5 minutes. In a container, crumble the tuna, add cream, mostaza and the beaten egg. Add chive, salt, pepper and mix. Fill zucchinis of the mixture.


Bake about 10 minutes.


Serve accompanied by rice.



 

Tart of eggplants and tomatoes 

 


Setting-up time: 20 minutes

Cooking time: 20 minutes


Ingredients (for 6 people):

for the dough:

- 150 g of flour

- 75 g of butter

- 1 glass bottom of water, salt 

-1 line of olive oil


For the side dish:

- 300 g of grilled eggplants 

- 3 tomatoes cut in dice (it's better without pips!)

- 1 ball of mozzarella cut in dice

- Grated Parmesan cheese

- olive oil


Preparation of the recipe :


Dough: mix quickly with the palm of the hand the flour, the salt and the oil with the butter softened in cream.


Add a line of water, to bind and gather the dough in ball if it's too sticky, rectify by adding some flour, and let it rest 1 hour if it's possible


Filling dish : spread the dough in a floured dish, sprinkle the pastry base of Parmesan cheese, then spread half of the eggplants.


Strew with half of the tomatoes and with mozzarella, salt, pepper, and repeat once the operation. 


End with a dash of oil on the set, then some Parmesan cheese.


Put in the oven 20 min on thermostat 6/7 (200°C, and serve it warm or cold.


 

 

Vegetables Crumble

 

 

 

 

 

 

Setting-up time : 60 minutes

Cooking time : 30 minutes


Ingrédients (for 4 people) :

- 1 kg of tomatoes

- 1 eggplant

- 3 zucchinis

- 1 red pepper and 1 green pepper

- 1 onion

- 1 clove of garlic 

- 3 tablespoons of olive oil

- thyme

- rosemary

- salt, pepper


For crumbs:

- 150 g of flour

- 100 g of butter

- 40 g of pine nuts

- 60 g of parmesan

- salt


Preparation of the recipe :


Slice thinly the onion and the garlic having removed the germ from it. Made warm the oil and make the garlic return with the onion. 


Cut the eggplant in small cubes and put them in the pot. When they are well gilded , add peppers cut in strips. Season with the thyme, the rosemary, the salt and the pepper. 


After 20 mn, add zucchinis cut in slices and seedless tomatoes. Mix and maintain a lively cooking so that vegetables return their water. 


Meanwhile, preheat the oven thermostat 6 (180°C and make crumbs: mix with the fingertips the flour, the Parmesan cheese and the butter. Add pine nuts. 


Pour vegetables into a dish and distribute crumbs above. Let it cook in the hot oven 20 - 30 mn.
